Roasted Aubergine Cannelloni with Homemade Tofu Ricotta

This Vegan Roasted Aubergine Cannelloni with our Basilico Pasta Sauce is simply divine!

It has a creamy homemade tofu ricotta on the top that really brings all the flavours and textures together, so give it a go and prepare to be wowed . ⠀⠀⠀⠀⠀⠀⠀

2 large aubergines, stalks removed
1 tbsp olive oil Mr
1-2 tsp salt
20g fresh basil leaves
¼ tsp sea salt
¼ tsp ground black pepper
For the tofu ricotta:
400g firm tofu, drained
2 tbsp lemon juice Mr
4 tbsp Nutritional yeast
2 tsp sunflower seeds
½ tsp sea salt


  1. Preheat your oven to 190C.
  2. Slice the aubergines lengthwise into 5mm slices and place them onto lined backing trays in a single layer.
  3.  Sprinkle 1-2 tsp of salt over the slices. Set aside for 10-15 minutes or until you see water drops appearing on top of the aubergine slices.
  4.  Wipe off the water and salt with a kitchen towel and transfer to the oven for 5 minutes at 190C to soften the slices. In the meantime, place your ingredients for the tofu ricotta into a food processor and process for about 5 minutes or until smooth and well combined.
  5.  Keep your oven preheated to 190C, and remove the aubergine slices when softened. Grease a 20cm x 20cm oven dish with 1 tbsp olive oil.
  6. Spoon about 1-2 tbsp of the tofu mixture onto each aubergine slice, top with 2 basil leaves and gently roll up into a ‘cannelloni’. Place each roll into the greased oven dish with the
    overlap facing down and repeat until you have all filled aubergine rolls sitting in the oven dish, neatly packed together.
  7.  Sprinkle any leftover basil leaves over the top, then pour the jar of Mr Organic Basilico onto the rolls. Add any leftover tofu ricotta on top in little dollops, season with a sprinkle of sea
    salt and black pepper and transfer to the oven to bake at 190C for 20-25 minutes or until golden on top.
  8. Remove from the oven and carefully serve with a ladle or large spoon.
  9. Enjoy on its own or with a delicious side salad!
