Lentil Bourguignon with Butter Bean Mash

Ingredients

1 large white onion, diced
1 medium carrot (or 5 snack carrots), chopped
1 stick celery, minced
4 cloves garlic, minced
250g white or chestnut mushrooms
1 sprig fresh thyme, stalks removed (or 1 tsp dried thyme)
1 sprig fresh rosemary, stalks removed (or 1 tsp dried rosemary)
2 tbsp brown rice flour
1/2 cup red wine
1 tbsp soy sauce
1 tbsp vegan Worcester sauce
1 tsp Marmite
1 bay leaf
500ml vegetable stock
Salt & black pepper
FOR THE BUTTER BEAN MASH
2 medium sized potatoes, peeled and halved
1/2 cup oat milk
1 tbsp wholegrain mustard
Salt & pepper
Fresh parsley or thyme, to garnish

Method

  1. Heat Mr Organic’s Extra Virgin Olive Oil in a pan on a medium heat, then add in the onion, carrot, celery and garlic. Sweat down for a couple of minutes, before then adding in the
    mushrooms and fresh herbs. Cook the mushrooms until slightly golden in colour.
  2. Add in the the Mr Organic Tomato & Vegetable Flavour Paste and the bay leaf. Stir through well, then sprinkle in the flour and mix through to coat everything.
  3. Pour in the red wine and allow the alcohol to cook off for a couple of minutes. Next, pour in the soy sauce, vegan Worcester sauce, add in the marmite and bay leaf, then pour in the
    vegetable stock. Stir through well and bring to a very gentle simmer.
  4. Drain the Mr Organic Beluga Lentils, rinse and drain again, then add into the pan. Season well to taste with salt and black pepper, stir well to combine then leave to cook on a low-medium heat for 30-40 minutes.
  5. For the Butter Bean Mash, add the peeled potato halves into a pan of boiling, lightly salted water. Boil for 15 minutes or until tender, then drain off the water. Drain the Mr Organic Butter Beans, rinse and drain again, then add them in with the potatoes. Drizzle in Mr Organic’s Extra Virgin Olive Oil, pour in the milk, add in the mustard and remove from the heat. Season well with salt and black pepper, then using a potato masher, mash the potatoes until smooth and creamy.
  6. Serve the Butter Bean Mash with the Lentil Bourguignon over the top and garnish with fresh parsley or thyme – enjoy!
