Beans alla Vodka

Move over vodka pasta and make some room for our  Beans alla Vodka.

Coated in a lusciously creamy and rich tomato sauce, this beany twist on the traditional Italian pasta alla vodka is a surprisingly simple way of wowing your friends.

40g vegan butter
1 red onion, finely diced
3 cloves garlic, minced
100ml vodka
250ml vegan double cream or coconut cream
black pepper
¼ tsp chilli flakes (optional)
1 tbsp nutritional yeast


  1. Melt the butter in a pan over medium heat, then add the olive oil and red onion. Cook for 3 to 4 minutes or until the onions are softened, then add the garlic. After a minute pour in the vodka. Bring to a simmer and cook for a few minutes until the liquid has reduced.
  2. Stir in tomato puree and passata and simmer for 5 minutes.
  3. Stir through the vegan cream and butter beans, and once heated all the way through, season with salt, pepper and chilli flakes.
  4. Remove from the heat and serve with a sprinkle of nutritional yeast.

Chef Tip: The beans are fantastic on their own, or you can serve them alongside freshly toasted bread, or roasted vegetables.
