Tortelloni in Broth

INGREDIENTS

1 small onion, diced
1 large carrot, diced
2 stalks celery, finely diced
3 garlic cloves, finely grated
150g fresh cherry tomatoes
60ml vegan-friendly red wine
1 bay leaf
750ml vegetable stock
A handful of fresh spinach
A handful of fresh parsley

METHOD

  1. Start by heating the olive oil in a large saucepan, then sauté the onion, carrot and celery for 5 minutes on medium-high heat. Add the grated garlic and reduce the heat. 
  2. After 1 minute, add the fresh cherry tomatoes. Cook them with the vegetables until their skins begin to burst, then deglaze the pan with red wine. 
  3. Pour in the vegetable stock once the wine reduces and add a bay leaf. Bring to a simmer, then add the tortellini. 
  4. Cook the broth on low heat for 10 minutes or until the tortellini are softened, then stir in the spinach and remove the soup from the heat. 
  5. To serve, season to taste with salt and pepper and sprinkle with fresh parsley before serving. 

Chef’s tip: For an extra boost of flavour, add a spoonful of Mr Organic Flavour Paste before serving.
