Giftable Treats: Cheesecake Santa Hats

These giftable “Santa hat” plant based mini cheesecakes are the perfect little surprise 🎅

This Christmas season, want to encourage you to get in the kitchen, rustle up a delicious treat and give it to a friend or family member to spread the festive cheer 🎄

INGREDIENTS

6 large strawberries, stems removed
For the cheesecake:
150g blanched almonds
¾ tsp vanilla extract
Juice of ½ lemon
2 tbsp nut butter
1 can coconut milk
1 tsp corn starch
½ tsp agar powder
For the buttercream:
125g dairy-free butter
170g icing sugar
½ tsp vanilla extract
40ml aquafaba (chickpea brine)

METHOD

  1. Place the almonds into boiling water and cook them for 20 minutes or until softened. Drain, then transfer them to the blender alongside the chickpeas, vanilla extract, lemon juice, nut butter, maple syrup and coconut milk.
  2. Blend on a high speed for 5-10 minutes or until well combined and completely smooth. Dissolve the corn starch and agar powder in a spoonful of water, and transfer the cheesecake mix from the blender until a non-stick saucepan. Stir through the dissolved corn starch/agar mix and heat over low heat for 10 minutes, until the mix begins to bubble.
  3. Place your Mr Organic biscuits into 6 lined muffin cases, and gently pour your cheesecake mix on top. Transfer to the fridge to set for at least 2 hours or overnight.
  4. To assemble your cheesecake santa hats, let’s whip up the buttercream! Place your dairy-free butter into a mixing bowl and whisk for 5 minutes until creamed. Carefully add in the icing sugar, vanilla extract and chickpea brine and whisk on a high speed for 1-2 minutes or until well combined. The buttercream should be thick and smooth – make sure not to overmix it as it can get too runny when overmixed. Transfer the buttercream to a piping bag.
  5. Place a little dollop of Mr Organic chocolate spread onto the middle of each cheesecake, then pipe a ring of buttercream around and place your strawberry upside down onto the
    buttercream. Pipe a little white buttercream onto the end of your strawberry, and repeat until all Santa hats are complete. Set into the fridge and allow to set for 30 minutes before serving.
