Level up your bean soup game with this quick and hearty Cannellini Vegetable Soup! Loaded with carrots and leeks alongside aromatic garlic and thyme, this easy soup is perfect for warming up on those cold winter days.

1. In a large pan, heat the olive oil on medium heat. Add the onion and sauté until softened. Add the carrot and leeks, stir regularly until all ingredients have softened and lightly caramelised. Sprinkle a little salt into the pan to speed things up.

2. Add the garlic and once fragrant, stir in the dried thyme. Toss to coat the veggies in the herbs and after heating through for a minute, pour in the veg stock.

3. Bring to a simmer, then add cover and reduce the heat. Let everything simmer for 5-8 mins for the flavours to meld together.

4. Add in the cannellini beans, and once heated through, use a stick blender to blend roughly 1⁄4 of the soup to give it a creamy texture. Stir well, and simmer on low heat for 10 mins, then season to taste with salt and pepper.

5. To serve, garnish the soup with fresh thyme and enjoy alongside a slice of freshly toasted bread!
