Aubergine Pizzas

Featuring our Tomato and Vegetable Flavour Paste for some oomph, these Aubergine Pizzas are as delicious as they are delicate.

INGREDIENTS

2 large aubergines, thickly sliced
A few fresh cherry tomatoes
A handful Fresh basil leaves
1-2 tsp dried oregano
For the cheese:
150g nuts, e.g. cashews, soaked, softened
75 ml nut milk, e.g. almond
1 tsp salt
1/2 tsp garlic powder
1 tbsp tapioca starch/flour
2 tbsp nutritional yeast

METHOD

  1. Place your aubergine slices onto a cutting board and generously sprinkle them with salt. Let them sit for 10 minutes. During that time the excess water will be drawn out of them. Wipe
    them clean with a kitchen towel.
  2. In the meantime, transfer your soaked and softened nuts into a blender alongside the nutmilk, salt, nutritional yeast, garlic powder and tapioca flour. Process until smooth, then preheat your oven to 180C.
  3. Top each slice of aubergine with the Mr Organic Flavour Paste and the toppings of your choice. Finish off with a spoonful of the vegan cheese mix on top and bake them in the oven
    until the aubergines are fully cooked.
  4. Before serving, top with dried oregano and fresh basil, then add some quartered cherry tomatoes and enjoy alongside a delicious glass of vino!

Chef’s tip: No aubergines to hand? No problem! You can also enjoy this recipe with courgette instead, or add the flavour paste + vegan cheese onto toast for a quick & delicious pizza toast. Scrumptious!
