Sweet Potato, Black Bean & Peanut Butter Curry

Method

Step 1: Place a large saucepan over a medium high heat with a drizzle of olive and add the chopped onion. Sauté till soft.

Step 2:  Next add the garlic and chilli, stirring continuously. Once fragrant add the tomato puree and paprika, mix together.

Step 3:  Then add the sweet potato, beans and vegetable stock. Mix everything together and bring heat down to low. Let gently simmer for around 20 minutes till the potato has softened and sauce thickened.

Step 4:  Take off the heat and mix through the peanut butter and cream. Serve with coriander, chilli slices and lime wedges.

50g ManiLife Organic Smooth Peanut Butter
1/2 onion, chopped
2 cloves garlic, finely chopped
1 chilli, finely chopped
1 sweet potato, peeled and chopped into chunks
250ml veg stock
150ml oat cream
Coriander, lime wedges and chilli slices to garnish
