Bruschetta Flatbread Pizza

This vegan Bruschetta Flatbread Pizza is the perfect dish for your next summer barbecue! With its Mediterranean twist and easy-to-make homemade flatbread, it’s sure to be a crowd-pleaser that will make your guests ask for seconds!

1. In a large bowl, whisk together the flour and salt. Add the olive oil and mix until the flour mixture is crumbly, then gradually add the warm water and mix until a dough forms.
2. Knead the dough on a floured surface for 5-10 minutes, or until it becomes smooth and elastic, then place the dough in a clean bowl and cover it with a damp cloth. Let it rest for 20-30 minutes. In the meantime, preheat the air fryer to 200°C (alternatively, oven to 220°C).
3. Divide the dough into two equal portions and roll them out into thin rounds.
4. Place the rounds on a non-stick sheet and pre-bake for 2-3 minutes in the air fryer (oven: 5-7 minutes) or until they are lightly browned.
5. Spread the Mr Organic Tomato & Olive Bruschetta mix evenly over both flatbreads. Add the sliced roasted red peppers on top and sprinkle the crumbled vegan feta cheese.
6. Air fry for 4-5 minutes (oven: 5-7 minutes), or until the crust is crispy and golden.
7. Garnish with fresh basil leaves, season with salt and pepper & slice to enjoy!


For the flatbread:
250g plain flour
1 tsp salt
1 tbsp olive oil
175 ml warm water
For the toppings:
1 roasted red pepper, thinly sliced
120 g crumbled vegan greek-style cheese
Salt & pepper, to taste
Fresh basil leaves, chopped
