Mediterranean Ratatouille Traybake

Combining vibrant veggies and fragrant herbs together with our delicious Organic Basilico Sauce, this one-pan wonder comes together in under 30 minutes, simply let the oven do the work for you.

Method

Step 1: Preheat oven to 200C/180 fan. Line two large baking trays with parchment paper.

Step 2:
On one tray toss the aubergine with 3 tbsp of olive oil and 1/4 tsp salt.

Step 3:
On another tray toss the peppers, courgettes and red onion with 1 tbsp of olive oil and ¼ teaspoon salt.

Step 4:
Roast both in the oven for 20 mins, turning once.

Step 5:
Once the veggies are cooked, transfer them all to one tray. Add the garlic, pasta sauce, thyme, chilli flakes, oregano, vinegar and black pepper and stir to combine. Cook for 5 more mins in the oven.

Step 6: Top with fresh herbs to serve!

1 aubergine (450g), cut into 2 cm cubes
1 red pepper, cut into 2 cm cubes
1 yellow pepper, cut into 2 cm squares
1 red onion, cut into wedges
1/2 tsp flakey salt
4 cloves garlic, minced
1 tsp fresh thyme
¼ tsp red pepper/chilli flakes
¼ tsp dried oregano
1/3 tsp red wine vinegar
1/4 tsp black pepper
1 tbsp fresh basil, to serve
1 tbsp fresh thyme, to serve
