Lemony Herb Pasta with Chickpeas

Pairing our creamy Organic Chickpeas with spinach and penne in a deliciously zingy lemon and herbaceous basil dressing, this delightful pasta dish packs in plenty of protein and fibre towards your 30 plants a week, and a whole lot of fragrant flavour

Method

Step 1: Preheat the oven to 200C / 180 fan.

Step 2:
Mix all the dressing ingredients together in a small bowl.

Step 3:
Add the chickpeas to a baking tray lined with greaseproof paper. Add 1 tbsp of dressing and optional salt. Roast for 25 – 35 minutes, turning once until crisp to your liking.

Step 4:
Cook the pasta as per the packet instructions, adding spinach for the last 1 minute, then drain.

Step 5:
Toss pasta, chickpeas and spinach with shaved Plant Based mozzarella or cheddar style cheese, or use crumbled Plant Based feta if you prefer, and the rest of the dressing. Top with fresh basil, lemon zest, salt and pepper to taste!

1 cup fresh spinach
35g Plant Based cheese, shaved
Lemony Basil Dressing:
1 tbsp lemon juice + zest
10g fresh basil, finely chopped
10g fresh parsley, finely chopped
1 clove garlic, minced
1 tsp red wine vinegar
1/2 tsp dijon
Salt + pepper
