Chickpea Puttanesca

Using pantry staples like our Organic Chickpeas, Passata and Tomato Puree, this dish is as easy as it is delicious. It’s made in one pan and comes together in just 40 minutes – making it perfect for a fuss-free weeknight dinner.

Method

Step 1. Heat our Extra Virgin Olive Oil in a large, shallow pan on medium then add in the thinly sliced garlic and chilli flakes. Fry for a couple of minutes until slightly golden and smelling fragrant.

Step 2. Add in the roughly chopped coloured tomatoes and allow to simmer down for around 20 minutes on a medium-high heat, stirring continuously, until a sauce forms.

Step 3. Once the tomatoes have cooked right down, add in the jar of our Organic Chickpeas along with the liquid they are in.

Step 4: Pour in the jar of our Organic Passata and add in the tomato puree. Stir through well and continue to gently simmer.

Step 5. Scatter in the green olives, capers and chopped parsley. Season well with sea salt and black pepper, and give it a final stir through.

Step 6:  Serve with a good drizzle of our Extra Virgin Olive Oil, garnish with more fresh parsley and enjoy this delicious Chickpea Caponata with a side of toasted, crusty ciabatta – enjoy!

1/3 cup green olives
2 tbsp capers
Handful fresh parsley, chopped
Sea salt & cracked black pepper
More parsley & olive oil, to garnish
Crusty ciabatta, to serve
