Butter Bean, Radicchio, Fig + Almond Traybake

Flavourful and high- fibre pairing sticky, fruity figs with our Organic Butter Beans and fresh radicchio, topped with creamy Julienne Bruno Burella, crunchy almonds and a fragrant herby oil, this sheet-pan crowd pleaser will have the whole family coming back for more!

Method

Step 1: Preheat the oven to 200C/180 fan. Add the beans and figs to a large baking tray.

Step 2:
Sprinkle over some of the thyme leaves and red chilli flakes along with a good pinch of salt and pepper. Drizzle with 1 tbsp olive oil and toss to combine. Bake for about 20 mins until the figs are soft and the beans a little crisp.

Step 3: 
Meanwhile, make the herb oil: Mix either in a mini blender or pestle and mortar the remaining thyme, lemon zest, fresh chilli, good pinch of salt and pepper and 1/4 cup of olive oil.

Step 4:
After 20 minutes, add the almonds and burrella to the tray and cook for 5 – 8 mins until the burrella goes soft and melty.

Step 5:
Add shredded radicchio and drizzle over the herb oil and top with fresh parsley!

4 figs, quartered
1 tbsp fresh thyme leaves
1/4 tsp chilli flakes
1 lemon, zest
Salt & pepper
1 small red chilli, finely chopped
80g almonds, chopped
1 head purple radicchio, shredded
2 Julienne Bruno Burrella, drained
1 tbsp parsley, chopped
