Hearty and packed with greens and bean plant protein, this delicious pasta dish is fragrant in flavour with fresh herbs, umami miso and comes together quickly for a perfect midweek meal!

Step 1: Heat a drizzle of olive oil in a frying pan over medium-high heat. Add the onion, carrot, and celery, and sauté until softened, stirring frequently. Add the garlic and cook, stirring constantly, until fragrant.
Step 2: Then stir in the passata, vegetable stock, miso paste, bay leaves, thyme, and seasoning. Reduce the heat to low and let the sauce simmer.
Step 3: Once simmering, add the pasta and cook for 10 minutes, or until al dente.
Step 4: Stir in the borlotti beans and cavolo nero. Once the greens have wilted, the dish is ready to serve.
Step 5: Top with freshly torn basil and enjoy!
