Vegan Risoni Soup

Autumn is here and that means it is time to soups. Combining our new green pea rice with our classic tomato products and basil pesto, this bowl of soup is full of flavour, texture, and goodness. Warming up body and soul.

INGREDIENTS

1 white onion, chopped
2 celery sticks, chopped
2 garlic cloves, minced
150 g of Mr Organic Green Pea rice
700 ml vegetable stock

METHOD

1. Heat 1 Tbsp oil on a medium/high heat. Add the onion and celery cook for 10 minutes. Drop the garlic to the pan and cook it for 1 extra minute.

2. Stir in the tomato, puree, chopped tomatoes, chickpeas and green pea rice. Increase the temperature and once it is boiling turn it down to a medium/low heat and simmer for 6/8 minutes.

3. Add the remaining 1 tbsp oil and drizzle the pesto over the soup.

4. Serve it with crusty bread on side.
