Tomato and Spinach Risoni

Legume rice is an excellent substitute for regular rice or pasta in any dish. Lentils are considered as one of the super ingredients: low in fat and very high in protein. And on the plus side, they taste wonderful!

INGREDIENTS

1 onion, chopped
3 cloves of garlic, minced,
1 tin of Mr Organic Chopped Tomatoes
1 tsp Italian seasoning
1/2 tsp salt
2 handful fresh spinach
1 tbsp nutritional yeast
Salt & Pepper

METHOD

1. Heat the oil in a large pan. Add the onion, season and cook it for 2-3 minutes

2. Add the garlic and cook it for 1 minute. Add the chopped tomatoes, the Italian seasons and the spinach. Season with salt and pepper.

3. Sprinkle the nutritional yeast and cook it for 20 minutes.

4. Add the cooked red lentil rice and cook it for another 5-10 minutes.
