1. Heat the oil in a large saucepan on a medium heat.
2. Add the onion and garlic and cook, stirring occasionally, until the onion has softened, approximately 5 minutes.
3. Add the ginger, pepper, garam masala and stir occasionally until the spices are releasing their fragrance. Add the remaining spices (coriander, cumin, turmeric & black pepper) and stir well.
4. Add the remaining ingredients and cover the pan, cook on low to medium heat for about 30 minutes, or until the veggies are softened.
5. Season to taste with salt and serve with rice.
