Simple Vegan Tomato Curry

Don’t get the recipe time tell you anything else: this curry is super simply to create and all you can create it all in one pan! Simply chop everything up and off into the pan – that’s dinner served!

2 tbsp Mr Organic Extra Virgin Olive Oil
1 medium Onion, diced
3-4 cloves of Garlic, minced
1 tbsp Ginger, freshly grated
1/2 to 1 Serrano Pepper, seeded and minced
2 tsp Garam Masala
1 tsp Ground Coriander
1/2 tsp Ground Cumin
1/2 tsp Turmeric
1/2 tsp Black Pepper
2 Cups Veggie Broth
1 tin of Mr Organic Chopped Tomatoes
1 medium Baking Potato, scrubbed and diced
3 cups Cauliflower Florets
2 Carrots, chopped
2 cups fresh Green Beans, cut into 2 inch pieces
1 tin of Mr Organic Chickpeas
Salt to taste


1. Heat the oil in a large saucepan on a medium heat.

2. Add the onion and garlic and cook, stirring occasionally, until the onion has softened, approximately 5 minutes.

3. Add the ginger, pepper, garam masala and stir occasionally until the spices are releasing their fragrance. Add the remaining spices (coriander, cumin, turmeric & black pepper) and stir well.

4. Add the remaining ingredients and cover the pan, cook on low to medium heat for about 30 minutes, or until the veggies are softened.

5. Season to taste with salt and serve with rice.
