Rainbow Burritos

4 wraps
1 tin sweetcorn (400g)
1 tin black eyed beans (400g)
1/2 jar of chutney eg. smoked tomato & garlic
500g alternative protein eg. tofu
4 handful of rocket
1 bunch spring onion


1. Lie the wraps out on piece of tin foil larger than the wrap.
2. Spread on a thick layer of chutney.
3. Layer on 1/4 of all the ingredients.
4. It will look really full but it is possible to roll! Fold in the right and left bits of the wrap and then roll the bottom of the wrap to the top.
5. Than roll the wrap in the tin foil tightly and tuck the edges. Cut the burrito in half!.
