High Protein Vegan Tacos

Deliciously healthy and super speedy to make. Perfect dinner for many scenarios: when you lack time, when you need some extra nutrition or when you craving something seriously yummy ASAP.
Kidney beans and green pea rice are excellent for packing more protein in any dish. Being versatile ingredients, you can create a wonderful plate of food at any time.

INGREDIENTS

1 Tbsp of smoked paprika
1/2 tsp black pepper
Handful of fresh parsley
1 tsp cayenne pepper
Salt to taste
Serve with:
Coconut yogurt
200g Tempeh mince (cooked in Mr Organic Sunflower oil with 1 Tbsp of soy sauce and 1 Tbsp liquid smoke)
100g Mr Organic Green Pea rice
Soft Tortillas
Fresh parsley

METHOD

1. Prepare your Green Pea rice according to packaging instructions.

2. Prepare the tempeh by mincing it first, then fry it in a little oil for 3 minutes before adding in the soy sauce and liquid smoke for flavouring. Stir to combine.

3. In a medium size pan, combine the kidney beans, chopped tomatoes and spices. Simmer until the liquid reduces.

4. Assemble your tacos: add 1-2 Tbsp of the green pea rice to each tortilla, top with the bean mix and tempeh mince and finishing off with a dollop of coconut yogurt & fresh parsley.

5. Enjoy!
