Gnocchi with Dill & Artichoke Cream

INGREDIENTS

FOR THE ARTICHOKE CREAM:
100g firm tofu
1 tbsp toasted sunflower seeds
4 cloves roasted garlic
2 tbsp nutritional yeast
2 tbsp fresh dill
40-60 ml gnocchi cooking water
50ml dairy-free cream
Salt & pepper to taste

METHOD

1. Start by cooking the Mr Organic Gnocchi according to the packaging instructions.

2. In the meantime, add ¾ of the artichokes to a food processor alongside the tofu, sunflower seeds, apple cider vinegar, roasted garlic and nutritional yeast. Process for a couple of minutes, scraping down the sides regularly until you get a smooth and creamy sauce. Add as much gnocchi water as necessary to get a smooth texture. Add the fresh dill and pulse for 20 seconds, then season to taste with salt and pepper.

3. Drain the cooked gnocchi, then place them back into the saucepan and stir in the dill, artichoke cream and dairy-free cream.

4. Serve the gnocchi topped with the remaining grilled artichokes, fresh dill and a sprinkle of nutritional yeast & enjoy!
