If you’re looking to warm up your winter menu this month why not try out this high protein, aromatic and flavour filled Red Curry by Gaz Oakley! This is sure to tantalise your taste buds!

1. First up, make the curry paste by simply adding all the paste ingredients to a food processor and blitzing until smooth. Then, pre heat a large saucepan over a low heat add a little cooking oil followed by half of the paste (the remaining paste can be stored in the fridge for up to a week).
2. Cook the paste for 2 minutes stirring often, before adding the spring onions, pepper, sea salt & sweet potato. Sauté the mixture for 4-5 minutes, then deglaze the pan with the coconut milk & vegetable stock. Stir well then bring to a simmer.
3. Next to the pan stir in the Mr Organic lentil rice, pop a lid on the pan & let the curry cook away for 10 minutes, stir every couple of minutes and make sure nothing is sticking to the bottom of your pan. After 12 minutes add the tofu, broccoli, soy sauce & sugar snap peas.
4. Cook the curry for 4 more minutes before stirring in the Thai basil & serving.
5. To garnish sprinkle over roasted peanuts, chopped spring onions, chilli & a drizzle of chilli oil.
