Garlic-ky Potato Cakes

These little savoury cakes are just a simple nice treat for anyone. Crisp potatoes served with a dollop of creamy, garlic mayo and fresh beetroot. Excellent dish for starters at a dinner party or a simple snack over the weekend or as a rich breakfast at any day.

4-6 people



4 large potatoes peeled and grated
1 onion, grated or finely chopped
a pinch of salt and pepper
3 Tbsp flour
1 flax 'egg'
1 raw beetroot peeled and shredded


1. Prepare your flax egg (1 Tbsp flaxseeds + 2 Tbsp water) and place aside

2. Combine the grated potatoes and onion, season with salt and pepper and add in the flax egg.

3. Sprinkle in the flour and combine until a thick dough is created. Use a tablespoon to portion the potato cakes, gently fry them in a little oil until golden on both sides.

4. Top with a dollop of Mr Organic Egg Free Garlic Mayo & shredded beetroot. Serve warm or cold!
