INGREDIENTS

Half bag of Mr Organic Country Mix
1 large onion, roughly chopped
4 large cloves of garlic, minced
2 carrots, peeled and sliced
1 parsnip, peeled & chopped
A handful of potatoes, scrubbed and chopped
250g chestnut mushrooms, sliced
2 tsp of black pepper
2 Tbsp coriander powder
1 tsp cayenne pepper
1 Tbsp Garam Masala powder
2 bay leaves
1 tsp turmeric powder
A sprinkle of chilli flakes
1 tsp salt
300ml tomato passata Mr
2 Tbsp tomato puree Mr
1 vegetable stock cube
150ml water

METHOD

1. Prepare the Country Mix according to the packaging instruction.

2. Splash the olive oil to a large saucepan, add the chopped onion and fry for about a minute (or until translucent), then squeeze in the minced garlic and cook for another 30 seconds.

3. Add the carrots, parsnip, potatoes and sliced chestnut mushrooms. Then stir to combine for about 2 minutes.

4. Pour in the cooked & drained Country Mix and add the rest of the ingredients. Gently stir to combine..

5. Simmer for 30 minutes on low-medium heat, until ready.

.6. Serve with rice & enjoy!
