Crispy Mushroom Burger with Artichoke Mayo

Are you craving something special but also familiar? Try this simple recipe with the combination of vegan mayo and artichokes, perfect for any occasion!

4 Portobello mushrooms
4 Tbsp chickpea (gram) flour
1/2 Tsp smoked paprika powder
100g panko breadcrumbs
1/2 Tsp fine sea salt
1/2 Tsp black pepper
4 seeded burger buns
lettuce & cucumber (for serving


1. Start by washing your Portobello mushrooms & removing the stems.
2. In a medium size bowl combine the chickpea flour and smoked paprika powder with 6 Tbsp cold water. In a separate bowl combine the panko breadcrumbs with sea salt and pepper.
3. Cover a pan with sunflower oil and heat it up, then first dip each mushroom into the chickpea mix, followed by the panko mix and place them into the pan to fry for 2 minutes. Flip halfway through the process.
4. Whilst your mushrooms are frying roughly chop up the Mr Organic Grilled Artichokes and combine them with the Mr Organic Mayo.
5. Assemble your burger: bun, lettuce, cucumber, Mr Organic Ketchup, crispy mushroom, artichoke mayo, bun. Serve immediately and enjoy!
