Cauliflower Alfredo Tortellini

When you looking for a speedy dinner full with flavours and some extra nutrition, this recipe will thick all the boxes.

The fresh cauliflower gives a zesty creaminess to the your plate, whilst the tortellini is a nice, filling, and quick to create.

1/2 head of a medium cauliflower
1 small onion, roughly chopped
2 small cloves of garlic, minced
1 tsp sea salt & 1/2 tsp of black pepper
3 Tbsp nutritional yeast
1 vegetable stock cube
100 ml drained tortellini water
70ml soy milk
1/2 tsp smoked paprika powder
1 Tbsp sweet miso paste
1 Tbsp coconut milk


1. Prepare the tortellini according to packaging instruction.

2. Steam the cauliflower until softened, transfer to a high-speed blender with the rest of ingredients. Blend until smooth.

3. Transfer to a medium size saucepan to heat. Combine with the cooked tortellini and serve hot.
