1. Cook the rice (2:1 ratio of water to rice)
2. In the mean time whilst rice is cooking, slice bell peppers in half and de-seed.
3. Place hollow side of the bell pepper on grill.
4. Grill peppers until charred.
5. After rice has finished cooking, add the jar of grilled pepper and mix thoroughly.
6. Stuff the rice into the peppers.
7. Season with salt, pepper, parsley and drizzle mayo on top and there you have it! The perfect BBQ summer dish!
