Tangy Arrabbiata Butter Beans

Who fancies some Garlicky Arrabbiata Butter Beans? High in protein, quick to make, and full of rich tomato sweetness…what’s there not to like?

This feisty dish is simmered to perfection with warm chilli in a wonderful, tangy tomato base and a garlic crisp garnish, making this meal just as comforting as it is vibrant.

Method

Step 1. Heat the oil in a pan on medium heat. Add the onion and garlic, and cook until the onion softens.
Step 2. Add 1-2 teaspoons of chilli flakes (to taste) and dried oregano, then stir in the tomato puree.
Step 3. Drain and rinse the butter beans. Add to the pan along with the chopped tomatoes. Season with salt and pepper, stir and simmer for about 15 mins.
Step 4. While the beans are simmering, make the garlic crisps. Thinly slice the 3 cloves of garlic. Heat a small amount of olive oil in a separate pan over low-medium heat. Add the sliced garlic and fry until crispy and golden. Remove them from the pan and place on a paper towel to remove any excess oil.
Step 5. Once the beans are done simmering, stir in a few leaves of fresh basil, leaving some for garnish.
Step 6. Serve the beans garnished with the garlic crisps and fresh basil, and enjoy them on their own or alongside freshly toasted bread!

1 onion, finely chopped
2 cloves of garlic
1-2 tsp chilli flakes
1 tsp dried oregano
1 tsbp Mr Organic Tomato Puree
A handful of fresh basil
Salt & Pepper
3 gloves of garlic (for garlic crisps)
Generous glug of Mr Organic Olive Oil (for frying)
