Butter Bean Bruschetta

Harnessing The Power Of Beans thanks to our Organic Butterbeans, this bruschetta is a simple yet delicious way of including some plant-based protein and fibre in your diet!

INGREDIENTS

2 slices Sourdough bread, toasted
1 tbsp Italian seasoning
250g mushrooms, sliced
1 pinch of salt
1 garlic clove, grated or crushed
1 tbsp tamari soya sauce
To Serve:
Fresh parsley
Chilli flakes

METHOD

  1. Start by toasting the bread slices – for a lovely golden colour, toast them in a skillet with a little bit of oil.
  2. Drain the butter beans and place them into a shallow bowl. Add lemon juice and mash the butter beans with the back of a fork. Stir in olive oil and Italian seasoning. Roughly dice the artichokes and mix them into the butter beans, then set aside.
  3. Cook the mushrooms in a dry pan with a little splash of water and salt. Once softened, add the garlic. Drizzle in the tamari and remove from the heat once the liquid evaporates.
  4. To serve, spread the butter bean mash across the toasted bread, top with mushrooms, then drizzle with balsamic glaze. To finish off, sprinkle a little fresh parsley and chilli flakes (optional)
